Christmas Fruit Cake - The Diabetics' Cookbook

2 cups whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup low-fat margarine
1 cup mixed dark and light raisins
1/2 cup almonds -- chopped
1/2 cup hazelnuts -- chopped
1 orange fine grated -- rind of
1 3/4 cups grated carrots
1/2 teaspoon mixed baking spices -- (allspice?)
1/4 teaspoon ground cinnamon
1/2 cup granulated sweetener
2 eggs -- beaten
3 tablespoons orange juice
2 tablespoons brandy or rum -- (optional)

Heat oven to 350F. Mix flour, baking powder and salt together and rub in the margarine until mixture resembles fine breadcrumbs.

Add fruit, nuts, orange rind, carrots and spices and mix well.

Mix the sweetener into the eggs and beat into the dry ingredients. Add enough orange juice to make a soft dough.

Put the mixture into 8" round or 7x7" nonstick cakepan and bake for 45-60 min. (or use larger pan and reduce cooking time) When ready, the cake should be firm to the touch and a toothpick should come out clean. Cool in the cake pan.

Turn out upside down, make a few toothpick holes in the bottom and spoon in any leftover orange juice and alcohol if using. Store in an airtight container.

Suggested icing is made with apples and cottage cheese.

:blink: Editor, I saw how much rum you put in that there fruit cake, now put that bottle down before Faithy has to put you in that there Pokey for Fruit Cake intoxication!

Fruit Cake! :ew: Gag me!!!!!!!!! I'll pass, but :th: anyhow. How's about a lowfat Fudge Recipe Faithy can eat? :sup:

I pass on fruit cake too. But look at this low fat fudge bar recipe I did find you. Sweet potatoes?

1/3 cup unbleached flour
1/3 cup oat bran
1/3 cup cocoa powder
1 cup sugar
1/8 teaspoon salt (optional)
1/2 cup sweet potatoes, mashed, cooked
3 large egg whites
1 teaspoon vanilla extract
1/3 cup pecans, chopped (optional)

Combine the flour, oat bran, cocoa, sugar and salt, if desired, and stir to mix well.
Add the sweet potato, egg whites, and vanilla extract, and stir to mix well.
Fold in nuts if desired.
Coat an 8-inch square pan with non-stick cooking spray.
Spread the mixture evenly in the pan and bake at 325° for about 25 minutes or until the edges are firm and the center is almost set.
Cool to room temperature, cut into squares and serve.

:hug: What a sweetheart you are editor. You know these actually sound pretty good. Plus my doctor ordered me lots of potassium as the two bags in emergency room last month were not fun. I'd much rather get it in my diet than by IV.

Even though I avoid sweet potato like you do mushroom, this actually sounded doable. I will let you, being tried and true, test it first bite, then I will be your sidekick to try it out. :yum:

Oh sure. Use poor lil Faithy to be the guinea pig! I bet if we lived in ancient days and you were King I'd be ordered to be your taste tester too! :yes: then you'd laugh as I made horrible faces :ew: and fell over. Boom! Sound of Faithy falling faint as we seem to still be missing fainting graphic. Oh? Could that be a little hint? Faithy innocently whistles!

I love makin you work! :moi: Oh and I miss my drama Queen smilie too where the Queen touches her head to her forhead it was on the show me all graphics list just in case you forgot!
