With my new slowcooker (crockpot) I'm experimenting a lot with healthier food options - it's a wonderful appliance! This morning, I took some chicken breast pieces without skin and added some nice spices (paprika, cayenne pepper, curry powder, soy sauce, apple cider vinegar, garlic, ginger) and water and when I get home tonight there will be a lovely, low-fat, cooked meal! Can't wait!
I'll put some recipes here as I find and try them, feel free to do the same!

Will do that, Linda. I love my crockpot and the majority of my meals are made in it. The meats come out so tender. I can't get that baking or grilling.

ooooooh crockpot recipes..my favorite! Just dont ask my husband Mike33 about my chicken Cacciatore recipe..that came out tasting worse than dogfood.. bad day with the spice rack I think! Never again! heheheee

This is what I made earlier this week:
Stir together in Crockpot:
1/4 cup soy sauce
1/4 cup apple cider vinegar
4 heaping tsp paparika
3 heaping tsp curry powder
1 heaping tsp black pepper
1heaping tsp ginger powder
1 heaping tsp garlic powder
1 heaping tsp ground red (cayenne) pepper
3 c water
2 onions, cut into chunks
Add:
3 pounds chicken (on bone), skin and fat removed. (The original recipe calls for thighs. To make it more healthy, you may want to use breast and add some healthy fat. I used skinless breasts, and drizzled some virgin olive oil over before switching the crockpot on)
Cook on low temp about 8 hours, until chicken falls off bone easily. Remove bones and chop chicken. Serve with brown rice. Serve with FF sour cream or yogurt, if desired. I had it just as is, like a stew almost. Oh and I didn't have onions so I just left that out, but I think it will make it even more delicious!

Sounds worthy of a try.
I created this recipe. One of dh's favorite. It is spicy but not hot.
Chicken drumettes
1 stick butter
1/3 c soy sauce
2/3 cup of water.
2 TBL dried hot pepper
Combine in sauce pan until butter is melted.
Remove skin from 2 pounds of chicken drumettes. Place in Crockpot and pour other ingredients on top. Cook on slow 7-8 hours.

Here is a recipie that I have
CrockPot Shredded Beef Tacos
1-1/2 pounds beef chuck roast
1 medium onion, sliced
1 cup water
1 package taco seasoning mix
10 ounces taco sauce
1 can diced green chilies
1 package taco shells
Toppings: shredded cheese, lettuce, tomato, sour cream.
Place beef and onion in slow cooker. Combine water and
seasoning mix in a small bowl. Pour over beef and onion.
Cook on LOW for 6-8 hours or until tender. Remove meat to
cutting board: shred beef with two forks. Place beef in
large bowl. Stir in taco sauce and chilies. Fill warmed
taco shells with beef mixture. Top with lettuce, tomato,
cheese, and low fat sour cream.

Crockpot Recipe of the Week
Tomato and Rice Casserole
4 tsp butter
1/2 upup uncooked rice
1 cup liquid from canned tomatoes
1-3/4 cup canned tomatoes, drained
2 tsp chopped parsley
1-1/2 tsp salt
1/2 tsp pepper
4 Tbs grated Parmesan cheese
Chopped chives
Saute rice in butter in fry pan until rice is golden brown. Put in crockpot. Pour tomato liquid, tomatoes, parsley, salt & pepper into pot. Mix well. Cover & cook on low 6-8 hours. Sprinkle with parmesan cheese & chopped chives before serving.

This is my Mom's simple recipe for Slumgullion adapted for the CrockPot. Your family will love it.
1 pound lean ground meat
1 15oz. can of peas
2 15 oz can of tomatoe sauce
1 large onion chopped
salt and pepper to taste
1 cup macaroni
Break apart and microwave gound meat for 8 minutes---drain
Add all ingedients to Crock Pot EXCEPT macaronii-cook on low 6-7 hours
Stir in dry macaroni and cook another hour.
Serve

Boysbach sent me a Crokpot eBook. I will be posting some of the general interest ones:
ALL DAY MACARONI AND CHEESE
8 ounces elbow macaroni, cooked and drained
4 cups(16 ounces) shredded sharp Chedder Cheese
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
Place the cooked macaroni in crockpot that has been sprayed with
nonstick cooking spray. Add the remaining ingredents, all except 1 cup
of the cheese, mix well.
Sprinkle with the remaining 1 cup of cheese and then cover and cook
on low setting for 5 to 6 hours or until the mixture is firm and golden
around the edges. Do not remove the cover or stir until it has finished
cooking.

Chicken Chow Mein
1.5 lbs boneless, skinless chicken breasts, cut in 1"
pieces
4 carrots, thinly sliced
4 green onions, sliced (include green portion)
3 stalks celery, sliced
1 cup low sodium chicken broth
1 Tbs sugar
1/3 cup light soy sauce
1/4 tsp crushed red pepper flakes
1/4 tsp ground ginger
1 clove garlic, crushed
8 ounces bean sprouts
8 ounces water chestnuts, sliced
1/4 cup cornstarch
1/2 cup water
Put chicken pieces in
crock pot. Add all ingredients except cornstarch and
water. Stir and cover; cook on low for 6 to 8 hours.
Turn to high. Combine cornstarch and cold water in a
small bowl; stir until dissolved. Stir into the crock pot
liquids. Keeping cover slightly ajar to allow steam to
escape, cook until thickened, about 15 to 30 minutes.
Serve over rice or with chow mein noodles. May be doubled
for 5-quart crock pot. Serves 6.

Yup! I have all the stuff and started boiling my noodles. My daughter loves mac n cheese! She'll be so happy!
I substituted:
1 cup of fat free soy cheese for 1 cup of the cheese
fat free evaporated milk for the evaporated milk
skim milk for the milk
The best I can calculate is that with my substitutions, and guessing that a serving is 1 cup and there are about 7 servings....

Sounds good!! Boysbach, I don't have room in my kitchen either.. so what I do is I put it right on my stovetop ( in between the burners of course) and when I am done I put it back down in my basement with the rest of my kitchen stuff. We put a bakers rack right down there so everything is easy to find. I am using mine now actually for one of those Crockpot Classics..those are a lifesaver on days where no one is home early enough in the evening to cook a "real" meal.

SWEET_N_SOUR CHICKEN
6 med. carrots, cut into 1/2" chunks
1/2 c. finely chopped green pepper
1 sm. onion, finely chopped
3 split chicken breasts (remove skin, optional)
1/2 tsp. salt
1 (10 oz.) jar Sweet N Sour sauce
1 (15 oz.) can pineapple chunks, drained
2 tbsp. cornstarch
Place all ingredients in crockpot with chicken on top. Cover and cook on low 6-8 hours. Remove chicken and thicken with 2 tablespoons cornstarch dissolved to a medium thick paste with water. Pour over chicken breasts - or remove chicken from bone and come with sauce mixture. Serve with steamed white or brown rice.

PEPPERONI PIZZA CHILLI
Havent tried this yet but iam going to next chilli night we have, thought you might want to see it Editor u pizza lover you :banana: :)
1 lb lean ground beef
2-cloves, garlic minced
1-19 oz(540ml) can pinto or Romano beans, rinsed and drained
1-71/2 oz can of pizza sauce
1-19 oz can Italian style stewed tomatoes, with juices
1- 7 1/2 can tomato sauce
4 oz pepperoni sliced
1 cup mushrooms
1 bell red pepper seeded and finely chopped
1 tsp dried oregano
1/2 tsp salt
1/2 cup grated cheese
1. fry your beef
2. Add beans, pizza sauce, tomatoes, tomato sauce, pepperoni, mushrooms :giggle: , red pepper, oregano and salt and stir in.
3. Cover and cook on low for 8-10 hrs or on high for 4-5 hrs
4. Spoon chilli into bowls and top with cheese

ASPARAGUS CASSEROLE
2 cans sliced asparagus, (10 oz each)
1 can cream of celery soup, (10 oz)
2 hard cooked eggs, thinly sliced
1 cup grated cheddar cheese
1/2 cup coarsely crushed saltines or Ritz crackers
1 teaspoon butter
Place drained asparagus in lightly buttered slow cooker/Crock Pot or
slow cooker/Crock Pot baking insert. Combine soup and cheese. Top
asparagus with sliced eggs, soup mixture, then the cracker
crumbs. Dot with butter. Cover and cook on low for 4 to 6 hours.

BARBECUE CHICKEN I
1 Chicken, cut up and skin removed
1 cup ketchup
3/4 cup brown sugar
3 tablespoons Worcestershire sauce
Place chicken in crockpot. Combine remaining ingredients and pour
over chicken.
Cook 4 hours on high or 8-10 hours on low. Delicious!

CASSEROLE IN THE COOKER
1 package (16 oz) frozen broccoli cuts, thawed and drained
3 cp cubed fully cooked ham
1 can condensed cream of mushroom soup, undiluted
1 jar (8 oz) process cheese sauce
1 cp milk
1 cp uncooked instant rice
1 celery rib, chopped
1 small onion, chopped
In a slow cooker, combine broccoli and ham. Combine the soup,
cheese sauce, milk, rice, celery and onion; stir into the broccoli
mixture. Cover and cook on low 4-5 hours or until rice is tender.
4 servings.

Crockpot Pork Chops
6 pork chops
1 small onion, chopped
2 stalks celery, chopped
1 clove garlic, minced
1 cup catsup
1/2 cup water
juice of 1 lemon
4 TBSP brown sugar
3 TBSP Worcestershire sauce
2 TBSP vinegar
1 TBSP mustard
1/2 can tomato paste, (3 ounces)
1/4 tsp. pepper
Whisk all the ingredients together (except for the pork chops). Place pork chops in the crockpot and pour the mixture over them. Cover and cook on LOW setting for 8 hours.

Beef Stew (Crock Pot)
1 tablespoon flour
3/4 teaspoon salt
dash of pepper
1 to 2 pounds stew meat
1 10 1/2 ounce can tomato soup
1 soup can water
1 onion, chopped
1/4 teaspoon dried basil, crushed
4 medium potatoes, pared and cubed
3 medium carrots, cut into 1 inch pieces
1/4 cup dry red wine or water
Mix soup, water, flour, wine, basil, salt, pepper and onion.
Add meat, potatoes and carrots.
Put in crockpot on low for about 8 hours.
Makes about 4 to 5 servings.

BROCCOLI SOUFFLE
2 pkgs. frozen chopped broccoli (2 lbs.)
1 can cream of celery soup (undiluted)
1 c. real mayonnaise
3 tbsp. grated onion
2 eggs, beaten
1 c. grated cheddar cheese
Ritz crackers
1 stick melted margarine
Cook broccoli; drain and cool. Mix soup, mayonnaise, onion, egg, and
cheese and add to cooled broccoli. Put in a lightly greased 3 1/2-quart
crockery cooker. Mix 1 stack Ritz or buttery crackers (crushed) with
margarine or butter. Put on top. Cook on high for 2 to 3 hours.
