GRILLED VEGGIE SANDWICH
1 Onion
3 Mushrooms
Frozen Broccoli cooked
with garlic
1 slice Bread
Mozzarella Cheese
Butter or Margarine
Grease and preheat grill.
Place the onion, broccoli and mushrooms in grill.
Sprinkle with your favorite seasoning (garlic salt,
seasoning salt, etc). Cook until the onions are
translucent and mushrooms and broccoli are
done. Pile on top of buttered bread. Add mozzarella
cheese and place the sandwich in the grill holding
the lid just barely open so the top of the grill does
not touch the cheese. Grill for a few minutes more
until the cheese melts. Add some horseradish for
a little extra zing.

That does sound good and will have to try it! Though for most of the winter we don't grill so I will have to try to sautee! :)
Sante Fe Veggie Burgers
Meatless burgers made great with veggies and spices.
1 c. steamed white rice, cooled
1/2 c. corn kernels, canned
1 green pepper, seeded and finely chopped
1/2 c. white onion, finely chopped
1 t. black pepper, coarsely ground
1 t. salt
1 t. lemon juice
1 t. chili powder
4 whole grain hamburger buns
In the bowl of a food processor, combine the rice, corn, green pepper, onion, pepper, salt, juice and chili powder. Pulse rapidly to produce a coarse, mealy texture. Shape the vegetable-rice mixture into 4 patties and refrigerate for 2 hours.
Set the temperature to 350F and allow the grill to preheat. Place the patties in the grill and set the timer for 4 minutes. Remove the burgers and place the patties in the hamburger buns. Top with your choice of accompaniments.
Serves 4.
Those sound good! I have a veggie burger I make at work that's made with rice and everyone loves it. I'll have to post it here sometime. I can never make enough of them.
