Title: Split Pea Soup

Barbara Ann - June 12, 2007 02:00 PM (GMT)
4 cups water
3 carrots, peeled and thinly sliced( I usually just buy the package of shredded carrot-saves time)
1 (16 ounce) bag dried green split peas
3 celery stalks, sliced
1 cup low sodium chicken broth
3 slices of Canadian Bacon, diced
1 teaspoon salt.
I usually add a 16 ounce bag of green beans. That gives us more vegees, but it is not necessary. Not part of original recipe.

Mix all the ingredients in a slow cooker. Cover and cook on High until vegees and peas are tender, about 5 hours.

I find it takes longer than five hours. I usually will make a double recipe and cook it all day long. Sometimes I will take a potatoe masher and mash the peas more. Of course, that is a personal preference.

Enjoy

Love it, Barb. Thanks, and I am going to add the celery to mine next time. Just had never thought ogf that and I know that is exactly what it needs! I cook my on medium for 8-9 hours but that is only because I get up so early in the day.
