ingreddients
1 large clove of garlic (more or less to suit taste)
a pinch or so of salt and pepper
olive oil
8 oz shredded mozzarella cheese
a tablespoon (or more to taste) grated parmesan cheese
8 oz low carb alfredo sauce (the one I use has 3 carbs so it is a judgment call)
2 medium-large boneless skinless chicken breasts cut in bitesize chunks
1 bag frozen broccoli thawed and drained well
Step one, coat a pan in olive oil and heat oil, add chopped garlic and saute for a minute or so, add chicken and salt and pepper and cook untill approximately %75 cooked or untill you see very little pink. remove from heat and set aside. preheat oven to 400 degrees.
step two, take a deep casserole dish and add thawed drained broccoli and chicken, mix together and add alfredo sauce and toss well. Mixture should be coated well but does not have to be soupy or "swimming" in sauce. add mozzarella on top spreading it evenly, then sprinkle parmesan all over the top of the casserole.
bake for 15 minutes at 400 degrees turning once in the middle of cooking as cheese burns easily (at least in my oven lol) it should be a little golden on the edges but not overdone.
